Where Science Meets Craft

Sugar & Season Bakehouse was founded on a simple belief: exceptional food brings people together.

 

After more than twenty years working in in the Life Science industry, founder Dana Patcas chose to pursue a lifelong passion for artisan baking. A veterinarian by training with a Master’s degree in Immunology, Dana brings a unique perspective to bread making—combining creativity, curiosity, and a deep understanding of fermentation, ingredients, and the biological processes that transform simple components into exceptional bread.

 

What began as a passion project has grown into a neighbourhood bakehouse known for naturally leavened sourdough breads, carefully crafted pastries, quality coffee, and a thoughtfully curated selection of local and Canadian-made products.

Why Sourdough?

Our commitment to sourdough is rooted in both flavour and science.

 

Unlike commercially produced breads that rely on rapid-rise yeast processes, our sourdough breads are given time. Through extended fermentation, naturally occurring yeasts and bacteria transform the dough, developing flavour, texture, and complexity that simply cannot be rushed.

 

Dana’s scientific background fostered a deep interest in the relationship between fermentation, nutrition, and digestibility. Research suggests that traditionally fermented sourdough may contribute to a lower glycemic response than many conventional breads, and can reduce certain gluten fractions and fermentable carbohydrates during the fermentation process.

 

While every individual responds differently, many of our customers seek out long-fermented sourdough as part of a lifestyle focused on blood sugar management, digestive comfort, and overall wellness. We regularly welcome customers who are mindful of diabetes, pre-diabetes, food sensitivities, or digestive concerns and who are looking for an alternative to highly processed commercial breads.

 

We believe that time matters. Fermentation matters. Ingredients matter. And when those elements come together properly, the result is bread that is both delicious and thoughtfully made.

While bread remains at the heart of what we do, Sugar & Season was always intended to be more than a place to buy a loaf.

 

We believe neighbourhood bakeries should be gathering places—spaces where people slow down, connect, and feel at home. Whether you’re stopping in for your morning espresso, picking up pastries for the office, selecting a gift from one of our local artisan partners, or grabbing a fresh loaf for dinner, we want every visit to feel personal and welcoming.

Sugar & Season Bakehouse proudly supplies breads and baked goods to Capers on Location, one of Toronto’s premier production catering companies. Through this partnership, our products have been served to crews supporting major film and television productions, international touring artists, and premium live events throughout the city.

 

While we are honoured to contribute to these world-class productions behind the scenes, our philosophy remains unchanged: every customer deserves the same level of care, whether they are enjoying a loaf at their family dinner table or working backstage at a major entertainment event.
